  • What’s in a name? We decided to name this coffee after the beautiful and elusive emerald-green hummingbirds that frequent the flowers at our farm. “El Colibrí” means “The Hummingbird” in Spanish, and it seemed fitting for this light, bright, and sweet coffee.

    How we got here: This coffee was hand-picked and hand-sorted before going through a double anaerobic fermentation process. In this process, the whole cherries are fermented for twelve hours, and then after the cherry skins have been removed (depulped), they are fermented again for another twelve hours. Finally, the coffee beans are washed and placed on drying beds for about twenty-one days. Throughout this period, the coffee beans continue to undergo rigorous quality control measures to ensure the best-tasting final product.
